Job descriptionEducation : High school diploma or equivalent. Experience : Previous experience operating sheeting machines or similar machinery in a manufacturing environment is preferred. Skills : Strong mechanical aptitude; troubleshooting and machine adjustment abilities; attention to detail; basic math; ability to read and interpret technical documents; good communication and teamwork skills. Work indoors; potential exposure to hot temperatures from ovens. May work close to others, usually within a few feet; comply with ventilation, cleanliness, space, lighting, and temperature standards. Standing for extended periods; may perform repeated movements; wear safety equipment (gloves, hair nets, steel-toed shoes / boots, beard nets). Willingness to work in a noisy and sometimes hot manufacturing environment; ability to bend or twist; ability to lift up to 50 lbs. Apply for the Processing Technician (Night Shift) position on our growing Manufacturing team.

Responsibilities
- Set up and operate the sheeter machine to cut rolls of dough into sheets according to production specifications.
- Adjust machine settings such as knife pressure, speed, and feed rate to ensure precise cutting.
- Monitor the machine during operation to detect issues and make necessary adjustments.
- Complete changeovers, including full washdown of equipment.
- Inspect finished sheets for quality, ensuring they meet specified dimensions, thickness, and finish.
- Identify and address defects or inconsistencies in the sheeting process; maintain production output and quality records.
- Follow Good Manufacturing Practices, Food Safety, and Food Defense guidelines.
- Perform routine maintenance on the sheeter machine, including cleaning, lubrication, and minor repairs.
- Troubleshoot and resolve operational issues to minimize downtime; coordinate with maintenance for more complex repairs.
- Perform allergen changeovers including removal of guards, tensions, rollers, etc.; replace sheeter knives when needed.
- Follow safety protocols and report hazards or incidents to the supervisor; ensure compliance with company policies and regulations.
- Load and unload dough, conduct ingredient mixing / loading into the seed hopper, and store materials to prevent damage or contamination.
- Work with the production team to meet daily and weekly targets; optimize operation to reduce waste and maximize output; participate in continuous improvement initiatives.
