Responsabilités
- Préparer les prototypes pour les projets en cours :
- Préparation de la viande : poulet, bœuf, porc, agneau, etc. ;
- Marination et / ou injection des morceaux de viande ;
- Inventaires des échantillons R&D ;
- Préparation et mise en place des évaluations organoleptiques ;
- Préparer les feuilles d’évaluation pour chaque produit ;
- Faire cuire les produits avec différents modes de cuisson ;
- Identifier adéquatement chaque produit pour l’évaluation ;
- Nettoyage des équipements et du Département R&D ;
- Préparation des échantillons pour exportation :
- Préparer les échantillons dans une boite et les étiquettes ;
- Commande des matériaux ;
- Évaluer les matières premières des différents fournisseurs ;
- Faire une analyse quantitative et qualitative des matières premières : Poids de l’emballage, , mode de conservation, apparence, etc. ;
- Évaluer les pertes des matières premières ; gras, veines, os, etc. ;
- Évaluer la grosseur des morceaux de brochettes ou lanières ;
- Effectuer la validation des études d’instruction de cuisine ;
- Aider aux projets de transformation de la viande : qui comprennent la coupe, l’emballage de produits frais et transformés ;
- Maintenir in environnement de travail propre et sécure ;
- Préparation du matériel de laboratoire et des formations ;
- Respecter les exigences réglementaires et les procédures opérationnelles établies par l’entreprise pour assurer un standard élevé de salubrité et qualité alimentaire ;
- Être responsale d’assurer la qualité et salubrité des produits, et de rencontrer les exigences du programme SQF durant les tâches assignées.

Habilités et compétences
- Diplôme culinaire ou certificat culinaire d’une école accréditée préféré ;
- Nécessite une connaissance des règles de sécurité alimentaire (HACCP et BPF) ;
- Capable de soulever jusqu’au 12,5kg (25lbs);
- Connaissances Word, Excel, Outlook.
