What You Will Be Doing
Prepare and serve all food items for a la carte and / or buffet menus according to hotel recipes and standardsProactively prioritize tasks with the Chef de Partie or Journeyperson to maintain a consistently high level of service and qualityEnsure food quality, consistency, and quantity meet established expectationsDemonstrate positive behavior and performance consistentlyFollow all food safety protocols and maintain a clean, organized kitchenManage food cost by controlling waste through FIFO rotation, proper ordering, storage, and preparationMaintain productivity and labor cost by staying focused on daily tasksUnderstand the menu, recipes, and presentations; identify potential allergens in each dishContribute ideas to menu development and assist with recipe creation and documentationLiaise with Banquets, Restaurants, and Stewarding for smooth operational communicationPerform other duties as assignedQualifications
Minimum of 1 year recent experience in a hotel or restaurant kitchen at a comparable level of luxury service as a prep cook, apprentice, 3rd cook, or similar roleCook’s Training certificate from a high school, college, or universityCurrent Food Safe Level 1 or equivalent recognized food safety certificateSuccessful demonstration of high technical and artistic culinary skills in a practical cooking testSuccessful demonstration of high culinary and food safety knowledge in a written testAbility to taste all food products – meats, seafood, produce, dry goods, dairyFluent English language skills, written and verbalProven ability to communicate effectively, work within a team, and delegate to othersExcellent organizational skills and initiative with ability to work well with little supervisionSound decision‑making skills and ability to prioritize tasks appropriatelyHigh level of responsibility and accountabilityStrong commitment to providing excellent service and exceeding guests’ expectationsFlexibility to work varying shifts, evenings, weekends, holidays, and early or late start timesAdditional Information
