As our Overnight Baker youll play a vital role in ensuring every morning begins with fresh handcrafted products that reflect the quality and standards of our award-winning hotel.

Working under our Make It Count philosophy you will produce exceptional baked goods that set the standard for each days service while maintaining the highest levels of food safety craftsmanship and operational excellence.

Positions Available & Starting Rate Per Hour:

• Third Cook - $19.83 per hour
• First Cook - $21.82

We recognize tenure through our compensation. Hourly rates increase after six months and yearly to three years.

The position will be discussed during the interview based on skills and qualifications.

Job Duties Include:

• Prepare and bake a variety of artisan breads rolls sourdoughs laminated doughs and specialty baked goods completing all stages of productionfrom mixing and scaling to proofing baking and finishingwhile ensuring at least 75% of products are made from scratch.
• Execute overnight bakery production according to standardized recipes production schedules and quality standards to support breakfast banquet and restaurant operations while monitoring dough development fermentation proofing and baking for consistent results.
• Maintain exceptional food safety and sanitation standards by following proper food handling storage labeling date coding FIFO rotation temperature monitoring and cleanliness procedures in compliance with hotel and regulatory requirements.
• Safely operate and maintain commercial bakery equipment including mixers sheeters ovens proofers blast freezers fryers and steamers while keeping workstations organized fully stocked and prepared for a seamless handover to the day shift.
• Support continuous improvement and teamwork by assisting culinary leadership with daily production planning contributing ideas to enhance recipes and processes and consistently upholding the hotels culinary grooming and operational standards.

Qualifications :

Your Skills & Qualifications:

Third Cook:

• 6 months to 1 year of kitchen experience preferred in either a pastry or bakery environment.
• Strong interest in pursuing a Baker Apprenticeship (sponsored program).
• Basic knowledge of food safety and kitchen operations including culinary fundamentals and baking techniques.
• Willingness to learn and take direction from senior kitchen staff.
• Strong communication and time management skills.
• Comfortable receiving coaching and feedback from senior staff.
• Demonstrates eagerness to build speed accuracy and consistency through repetition.
• Shows curiosity and a desire to grow into line responsibilities over time.

First Cook:

• Minimum 2 years of bakery production experience in a high-volume bakery hotel resort or commercial kitchen.
• Experience producing artisan breads sourdough products naturally fermented breads and laminated doughs.
• Culinary diploma or equivalent training is considered an asset.
• Valid Canadian Food Handler Certification.
• Strong knowledge of baking techniques fermentation and bread production.
• Excellent attention to detail and commitment to producing consistent high-quality products.
• Ability to work independently and efficiently during overnight shifts.
• Strong organizational communication and time management skills.
• Positive attitude with a collaborative approach to working within a team.
