We Are Looking For : Responsibilities :
Responsibilities :
- Have the ability todemonstrate a complete understanding of the required menus
- Prepare meats, fishes,pastas, side dishes and garnishes following recipes carefully
- Roast, fry, steam, grill,bake meats, fishes, vegetables as required by recipes
- Prepares food by cleaning,peeling, mincing, cutting, chopping, mixing portioning, measuring ingredients,packaging and labelling
- Maintain proper food productionrecords, ensure all equipment is operable
- Responsible for sanitationand post-service set-up
- Notify manager of anymaintenance repairs need or unsafe conditions
- Taste and smell preparedfood to determine quality and palatability
- Monitor temperature of hotand cold foods through food preparation and service to ensure that establishedtemperature goals are met prior to steam table transfer and maintainedthroughout meal service
- Studiesrecipes assigned by the Executive Chef, prepares and coordinates all meals
- Coordinatesprep for the following day’s menus
- Supervisescooks and perp workers, manage the prep list to planduties
- Ensuresstandard of recipes to maintain consistent quality
- Plans,modifies and develops menus based on the airlines requirements
- Performspre-meal meeting with food directors and other team members to review detail ofthe menus and plan the production
- Assistsin the coordination and execution of special menus for client presentations
- Ensuresall kitchen equipment is in working order and kept clean at all times
- Wear foodsafety equipment while on duty, use work safety equipment while on duty
- Maintaingood portion control and forecast of production
- Practiceproper grooming, personal hygiene, and use safety equipment
- Make surethat staff places racks of products in cooling tunnel or any other available waitingarea, stocked and ready to go
- Communicateeffectively with kitchen personnel & other unit departments
- Compliancewith all company service standards, health & safety procedures, food safetyrequirements
- Performother duties as assigned
Perfil
Profile :
- Mandatory prior experiencein a similar position IN A RESTAURANT or IN A CATERING BUSINESS
- Experience with Halal,Middle Eastern, Indian Cuisine is a strong asset
- Ability to stand for longperiods
- Ability to read in English,write in English, speak in English
- Good knowledge of HACCP isan asset (training will be provided otherwise)
- Ability to handle pressurein a fast-paced environment
- Ability to work on weekends
- Attendance, diligence,punctuality, reliability
