Join a distinguished culinary team at a Michelin One Key-awarded hotel (two years in a row) as a Pastry Chef de Partie. Starting Rate : $26.93 per hour
We recognize tenure through our compensation. Hourly rates increase after six months, and yearly to three years. At three years the pay rate for this role would be $32.47.
Job Duties Include :
- Assist the Chefs with the day-to-day kitchen operations.
- Prepare and bake a wide range of breads, rolls, sourdoughs, laminated doughs, and specialty baked goods
- Ensure proper fermentation, proofing, and baking techniques are applied at all times
- Manage kitchen expenses within hotel budget guidelines, focusing on minimizing labor costs, food costs, waste, and unnecessary expenses.
- Train, mentor, and lead all cooks below Chef de Partie level in daily duties and expectations.
- Take ownership of station readiness, organization, and performance during service, ensuring standards are upheld through direction and oversight
- Provide real-time coaching and corrective feedback to junior pastry cooks to maintain consistency and craft standards
- Actively contribute ideas, opinions, and suggestions during daily shift briefings.
- Delegate and participate in the preparation, cooking, and service of all food items for à la carte and buffet menus, ensuring adherence to recipes and standards.
- Submit work orders for equipment repairs as needed.
- Place purchase orders for food using the Birchstreet system and requisition products from other kitchens.
- Comply with, enforce, and uphold all Fairmont Hotels & Resorts standards regarding grooming, hygiene, food safety, and the Culinary Cultural Manual.
- Record food, fridge, and freezer temperatures twice daily.
- Ensure cleanliness and proper maintenance of all work areas, utensils, and equipment.
- Perform other duties as assigned.
Qualifications

Minimum 4 years culinary experience, preferably in a luxury hotel or high-volume kitchenRed Seal Certification or recognized international equivalent requiredCulinary School diploma or certificate is an asseValid Canadian Food Handling CertificationExperience with natural fermentation, artisan breads, and laminated doughs, as well as some pastry production an assetStrong attention to detail, consistency, and accuracy in recipes and platingHighly self-motivated with strong initiative; excels at managing time and prioritizing tasks independentlyProven ability to lead, organize, and communicate effectively in dynamic environmentsFosters a collaborative team culture with a positive, inclusive approachMakes confident, sound decisions under pressure while maintaining service standardsAdditional Information
