A Mozzarella Maker is responsible for making fresh Mozzarella according to Eatalys authentic Italian recipe. Reports to the Market Manager.
- Utilizes fresh mozzarella curd to heat stretch by hand and make housemade mozzarella and other pasta filata offerings fresh daily according to Eataly recipes
- Engages all senses : tastes smells feels listens and observes all characteristics of each batch to maintain and elevate quality
- Records daily the weight of ingredients used batch sizes and amounts transferred to other outlets
- Makes variations in time cycles and ingredients used as necessary for succeeding batches
- Cares for and handles products with careful attention to quality control and waste management
- Weighs packages and labels mozzarella lab offerings
- Stocks display refrigerators neatly accurately and in a timely manner
- Provides guest service and information on mozzarella-making process to guests
- Cleans work station thoroughly following food safety best practices
- Ensures collateral supplies are in stock and being utilized properly in the lab
- Performs other duties as required or assigned
Qualifications :
