Reporting to the Central Kitchen Manager (or his / her delegate) or each store’s Department Head, the Head Cook Trainee is responsible for managing, disciplining, providing guidance and training of Kitchen Deli Production staff at the assigned store or Central Kitchen. The Head Cook Trainee is also responsible for the production of the assigned products (BBQ, Hot Food, Dim Sum, Sushi and other finished or semi‑finished products) based on orders received, quality control, inventory and wastage as well as supervising the team to ensure daily kitchen food production and working conditions are complied to HACCP, corporate policies and other statutory requirements.

Since then, it has expanded rapidly and is now Canada’s largest Asian supermarket chain with 34 stores across the country : 14 in BC, 7 in Alberta, 12 in Ontario, and 1 in Quebec. The Company’s continuous expansion is going to bring more new stores in the next couple of years.
Responsibilities
- Manage the Central Kitchen or store production processes and its overall working environment
- Responsible for managing the team’s performance, execute disciplinary actions, and provide specialty training to the team in his / her assigned area
- Monitor production efficiency and evaluate the productivity level during work in progress
- Based on orders received, prepare, handle, clean, cut, marinate and cook the right quantity of foods for the assigned section, which includes but are not limited to BBQ, Hot Food, Dim Sum, Sushi and other finished or semi‑finished products
- Ensure recipes, ingredient specifications, quantity, quality, cooking time as stated in the SOPs are being executed
- Ensure proper receiving is done; perform quality and inventory checks and wastage control
- Manage product quality, food safety, freshness and ensure FIFO is strictly practiced within the department
- Ensure that food is properly stored and handled at all times by ensuring all temperature records are properly completed
- Responsible for the cleanliness, hygiene, equipment and tools maintenance and workplace safety; ensure garbage, recycled materials and other disposable items are handled timely and properly
- Develop and launch products for special events to create customer’s excitement
- Perform any other duties as assigned by the superior(s)
