Description

  • Develop and execute banquet menus that complement the estate’s wine offerings and align with a farm-to-table philosophy.
  • Oversee all food preparation, cooking, and presentation for events, ensuring consistency and excellence.
  • Manage and lead the banquet kitchen team, providing training and direction to maintain efficiency and professionalism.
  • Work closely with the Events and Front-of-House teams to coordinate seamless service for weddings, corporate functions, and private dining experiences.
  • Maintain high standards of food safety, hygiene, and kitchen cleanliness.
  • Manage inventory, ordering, and cost control to maximize efficiency and minimize waste.
  • Adapt menus and event offerings based on seasonal availability and dietary preferences.

Requirements

  • Proven experience as a Banquet Chef, Sous Chef, or similar leadership role in high-end catering, hospitality, or winery settings.
  • Strong background in farm-to-table, seasonal, and locally inspired cuisine.
  • Excellent organizational and time management skills, with the ability to oversee multiple events simultaneously.
  • Experience managing kitchen teams in a fast-paced, high-volume environment.
  • Knowledge of food cost management, purchasing, and inventory control.
  • Passion for sustainability and working with fresh, local ingredients.
  • Ability to collaborate with winemakers and event planners to create exceptional pairings and guest experiences.
