Job description

Description du poste :

Sous l’autorité du gestionnaire-chef, le 1er cuisinier prépare les plats en respectant la réglementation en matière de sécurité et d’hygiène alimentaire. Il participe à la réalisation des recettes en fonction des indications fournies par le gestionnaire ainsi qu’assurer la mise en place requise pour la distribution.

Responsabilités

  • Préparer les items du menu assignés, en assurant leur qualité
  • et température optimums en tout temps (proportionner, préparer, assaisonner et cuire);
  • Évaluer les quantités requises pour la préparation des plats;
  • Participer au montage et au service des plats;
  • Produire ou participer à la production des événements spéciaux assignés;
  • Aider à la formation du personnel de cuisine durant la production;
  • Assurer le respect des techniques appropriées de manutention et d’entreposage des aliments en tout temps;
  • Compléter tous les registres nécessaires, soit des températures de maintien des aliments chauds, température du réfrigérateur, congélateur, calibration thermomètre;
  • Participer au rangement à l’étiquetage et la rotation appropriés des stocks;
  • Toute autre tâche connexe.

Prérequis

  • Minimum de 5 ans d’expérience pertinente en cuisine;
  • Formation MAPAQ (un atout);
  • Formation en cuisine ou toute autre formation équivalente;
  • Maitrise des techniques culinaires de base et de cuisson;
  • Bonnes connaissances du fonctionnement des matériels (four rational, braisière, Alto-Shaam);
  • Expérience pertinente en banquet/cafétéria (un atout);
  • Aptitude de cuisine diversifiée;
  • Habileté à travailler sous pression;
  • Habileté de s’adapter à différent poste;
  • Faire preuve d’initiative et de débrouillardise;
  • Avoir un bon sens de l’organisation.
