Summary:

The Kitchen Manager supports the manager of a restaurant with medium sales volume and moderately complex kitchen and culinary operations and is responsible for day-to-day supervision of and assignment of work to non-management associates. This position is also responsible for implementing kitchen and culinary changes, as well as performing all other responsibilities as directed by the business or assigned Management of which associate is capable of performing.

This is an exempt position and typically reports to the Restaurant Manager, depending on local requirements.

Essential Functions:

  • Ensures on a daily basis that the kitchen is staffed appropriately, the kitchen is clean, inventory levels are appropriate, and equipment is working properly
  • Supervises the day-to-day activities of kitchen staff and assigns responsibilities for specified work
  • Continually monitors and updates prep, par and pull sheets
  • Trains cooks and prep cooks
  • Ensures recipe compliance and completes self-inspection reports
  • Ensures expediting is performed correctly
  • Maintains planograms for walk-ins
  • Identifies hiring, firing, advancement, promotion or any other associate status change needs of the kitchen staff
  • Complies with company and franchise standards of operation procedures, as well as those of all applicable regulatory agencies, and ensures on a daily basis that all products are prepared and presented in accordance with brand or company standards
  • Provides the highest quality of customer service to the customers at all times, to include ensuring the proper training of all staff and supporting associates to ensure customer satisfaction and product quality

Minimum Qualifications, Knowledge, Skills, and Work Environment:

  • Requires a High School diploma or general education development (GED) diploma; Inter-Provincial Red Seal certification in cooking preferred; brand certification a plus
  • Requires 2 or more years of job-related experience in medium volume and/or multi-unit kitchen operations; 3 or more years preferred
  • Demonstrates knowledge of product, customer service, services and quality standards required, equipment and operations standards required
  • Demonstrates team management, delegation, issue resolution, coaching skills and ability to motivate others and act as a change agent
  • Demonstrates organization and multi-project time/issue management
  • Requires the ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably with individuals

Résumé :

Le Responsable de cuisine assiste le gérant d'un restaurant à volume de ventes moyen et aux opérations culinaires et de cuisine de complexité modérée ; il est chargé de la supervision quotidienne et de l'attribution des tâches aux employés ne faisant pas partie de l'encadrement. Ce poste implique également la mise en œuvre des changements relatifs à la cuisine et aux opérations culinaires, ainsi que l'exécution de toute autre responsabilité demandée par la direction de l'entreprise ou par le personnel d'encadrement désigné, dans la mesure des capacités de l'employé.

Il s'agit d'un poste de cadre (exempté des heures supplémentaires) qui relève généralement du Gérant du restaurant, selon les exigences locales.

Fonctions essentielles :

S'assure quotidiennement que la cuisine dispose d'un effectif adéquat, qu'elle est propre, que les niveaux d'inventaire sont appropriés et que l'équipement fonctionne correctement.

Supervise les activités quotidiennes du personnel de cuisine et attribue les responsabilités pour des tâches spécifiques.

Surveille et met à jour en permanence les fiches de préparation, les niveaux de stock de référence (par) et les fiches de sortie de stock.

Forme les cuisiniers et les commis de cuisine.

Veille au respect des recettes et remplit les rapports d'auto-inspection.

S'assure que l'envoi des plats (expediting) est effectué correctement.

Gère les planogrammes pour les chambres froides.

Identifie les besoins en matière d'embauche, de licenciement, d'avancement, de promotion ou de tout autre changement de statut du personnel de cuisine.

Se conforme aux normes de procédures opérationnelles de l'entreprise et de la franchise, ainsi qu'à celles de tous les organismes de réglementation applicables ; s'assure quotidiennement que tous les produits sont préparés et présentés conformément aux normes de la marque ou de l'entreprise

Offre en tout temps un service à la clientèle de la plus haute qualité, notamment en veillant à la formation adéquate de tout le personnel et en soutenant les employés afin de garantir la satisfaction de la clientèle et la qualité des produits.

Qualifications minimales, connaissances, compétences et environnement de travail :

Exige un diplôme d'études secondaires ou un diplôme de développement de l'éducation générale (GED) ; la certification interprovinciale « Sceau rouge » (Red Seal) en cuisine est privilégiée ; une certification propre à la marque constitue un atout.

Exige au moins deux ans d'expérience professionnelle pertinente dans des opérations de cuisine à volume moyen et/ou au sein d'établissements multiples (multi-unités). 3 ans d'expérience ou plus souhaités

Démontre une connaissance des produits, du service à la clientèle, des services offerts, des normes de qualité requises, ainsi que des équipements et des normes opérationnelles exigés

Démontre des compétences en gestion d'équipe, en délégation, en résolution de problèmes et en accompagnement (coaching), ainsi que la capacité à motiver autrui et à agir comme agent de changement

Démontre des aptitudes en organisation et en gestion simultanée du temps et des problèmes liés à des projets multiples

Nécessite la capacité de parler, de lire et de comprendre des instructions, de la correspondance brève et des documents de politique, ainsi que de converser aisément avec diverses personnes
