Job Title: Sushi Cook

Location: Queen’s Harbour

Position Overview:

As a Sushi Cook at Queen’s Harbour, you are a critical member of our kitchen team, focusing on the preparation, presentation, and execution of high-quality sushi and raw dishes. You’ll showcase precision, creativity, and consistency in every roll and slice while maintaining strict standards for freshness and hygiene. This role is perfect for someone with strong knife skills, a passion for Japanese cuisine, and a desire to be part of a high-performing, forward-thinking kitchen.

Responsibilities:

  • Craft Sushi & Raw Dishes: Prepare sushi rolls, nigiri, sashimi, and other raw bar offerings to exacting standards of flavor, texture, and presentation.
  • Maintain Freshness & Quality: Monitor the freshness of fish and other ingredients, ensuring all items meet safety and quality standards.
  • Keep Your Station Clean: Maintain a clean, organized sushi station, following all food safety and sanitation protocols.
  • Support the Line: Collaborate with fellow kitchen staff to ensure seamless execution of MediterrAsian offerings.
  • Prep with Precision: Handle fish breakdown, rice preparation, and ingredient organization to support a smooth service flow.
  • Follow Recipes & Guidelines: Execute dishes according to set specifications while contributing creative touches where appropriate.
  • Close with Care: Properly clean and store sushi tools and ingredients at the end of each shift to ensure readiness for the next day.

Qualifications:

  • 2+ years of solid understanding of sushi preparation and raw bar techniques
  • Advanced knife skills and ability to work with raw fish and delicate ingredients
  • Culinary diploma or sushi training certification (preferred but not required)
  • Familiarity with proper food storage and handling procedures for raw ingredients
  • Ability to work cleanly, efficiently, and with precision in a fast-paced kitchen
  • Demonstrated ability to communicate and collaborate with kitchen team members
  • Strong time management and organizational skills
  • High attention to detail and commitment to quality
