What you will be doing :

  • Review daily events and reservations with the Culinary Leadership to ensure timely preparation of food items in line with Fairmonts high standards of quality and efficiency.
  • Execute food preparation cooking plating and presentation with precision meeting the expectations of a worldclass culinary experience.
  • Maintain a clean and organized kitchen environment adhering to all food safety and sanitation protocols.
  • Ensure proper rotation and storage of products in all chillers to minimize waste and spoilage.
  • Handle store prepare and serve all food products safely strictly following Fairmont Waterfronts guidelines and Food Safety standards.
  • Complete all EHC (Environmental Health Consultancy) standards daily including filling out temperature logs labelling and dating items and maintaining cleanliness in food storage areas.

Qualifications :

Your experience and skills include :

  • Previous 2 years experience in a highend kitchen required
  • High level of knife skills
  • Journeypersons papers or international equivalent preferred
  • Diploma / Certification in a Culinary discipline preferred
  • BC Food Safe Certification required
  • Strong interpersonal and problemsolving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fastpaced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs remaining calm and courteous at all times
