The Food and Beverage Manager is responsible for overseeing the daily Food and Beverage operations while coordinating and executing special events, banquets, and catering functions. This role is accountable for delivering exceptional guest experiences, leading and developing team members, and ensuring operational excellence across all Food and Beverage areas.
The Food and Beverage Manager prepares banquet event orders (BEOs) detailing guest expectations, including menu selections, service timelines, attendance numbers, room set-up requirements, and dietary accommodations. Using this information, the manager coordinates kitchen, service, and labour requirements to ensure successful event execution.
In addition, the Food and Beverage Manager is responsible for managing day-to-day operations, scheduling, inventory control, labour and food cost management, budgeting, KPI performance, cash controls, and compliance with health, safety, and liquor regulations. The successful candidate will work closely with Culinary, Sales, Operations, and Banquet teams to ensure events and daily operations are delivered efficiently, profitably, and in accordance with company standards.
Key Accountabilities / Responsibilities
- Lead and manage the day-to-day Food & Beverage operations across multiple outlets.
- Recruit, train, coach, and develop Food & Beverage team members while fostering a culture of accountability, engagement, and continuous improvement.
- Deliver exceptional guest experiences by maintaining high service standards and responding to guest needs in a professional and timely manner.
- Develop and manage employee schedules to ensure operational coverage, productivity, and efficient labour utilization.
- Monitor labour costs and staffing levels to support departmental budgets and operational goals.
- Analyze departmental performance and drive results through effective management of Key Performance Indicators (KPIs), including sales, guest satisfaction, profitability, and operational efficiency.
- Support menu development, feature promotions, pricing initiatives, and revenue-generating opportunities.
- Manage purchasing, receiving, inventory control, and stock management activities to ensure product availability and minimize waste.
- Conduct regular inventory counts and investigate discrepancies to maintain inventory accuracy.
- Ensure the secure handling of cash, deposits, and valuables in accordance with company procedures.
- Address and resolve guest concerns, service issues, and operational challenges in a professional manner.
- Maintain compliance with all health, safety, sanitation, and company policies and procedures.
- Prepare and manage Banquet Event Orders (BEOs), ensuring all guest requirements, menu selections, dietary accommodations, timelines, and room setup details are accurately communicated.
- Coordinate staffing, equipment, and operational requirements for banquets, events, and catering functions.
- Collaborate with Culinary, Sales, Banquets, and Operations teams to ensure seamless execution of events and daily operations.
- Manage departmental budgets and contribute to financial planning initiatives.
- Handle employee relations matters, performance concerns, and workplace conflicts professionally and fairly.
- Ensure compliance with all applicable MLCC, LGA, and regulatory requirements.
- Perform other duties as assigned.
Qualifications & Requirements
- Minimum 5 years of Food & Beverage leadership experience, preferably managing multiple outlets, departments, or service areas.
- Strong understanding of Food & Beverage operations, hospitality service standards, and guest experience management.
- Demonstrated knowledge of labour planning, scheduling practices, productivity management, and workforce utilization.
- Experience interpreting financial reports and using operational data to support business decisions.
- Knowledge of food and beverage cost control, purchasing procedures, budgeting, and profit optimization.
- Experience with inventory management systems, stock control processes, ordering procedures, and variance analysis.
- Proven ability to establish goals, monitor performance, and drive operational results.
- Strong leadership skills with a track record of building, coaching, and motivating teams.
- Excellent interpersonal skills with the ability to develop positive working relationships across departments.
- Exceptional customer service and guest relations skills.
- Strong organizational, planning, and prioritization abilities with a high level of attention to detail.
- Proficiency with Microsoft Office applications, including Word, Excel, and Outlook.
- Experience using POS Systems and Squirrel Systems is considered an asset.
- Excellent verbal and written communication skills.
- Strong problem-solving, conflict resolution, and decision-making abilities.
- Ability to work independently and effectively in a fast-paced, deadline-driven environment.
- Professional, reliable, adaptable, and results-oriented approach to leadership.
- Post-secondary education in Hospitality Management, Business Administration, or a related field is considered an asset.
- Physically able to stand, walk, bend, and lift as required.
- Must be available to work a variety of shifts, including evenings, weekends, and holidays.
