What will you do in this job?
The Chef de Partie will provide excellent guest experiences through the consistent preparation and focused execution of food items. Successful candidate will operate in a manner that provides a safe and enjoyable experience for the guest, co-workers and self.
Acts with integrity, honesty and knowledge that promotes the culture, values and missions of PursuitAbility to create and execute fine dining pastry dishesInspirationally lead and train kitchen personalSupervise / coordinate the preparation and all pastries at the Banff GondolaProvide culinary instruction and demonstration of culinary techniquesOrder to forecasted volumes and specify budgetsSelect and develop standardized recipes to ensure consistent qualityMaintain / audit presentation technique and quality standardsEnsure all Health and Safety protocols are being adhered to as per AHS guidelinesOversee special catering eventsMeet or exceed forecasted / budgeted COGS / LTR and operational budgets (expenses)Works within inventory control systems including daily updates to ensure accuracyComplies with Pursuit Branded policies and proceduresFollows Pursuit pillars of employment and serviceComfortable guest facing and tableside interactionsFlexible to work in various locationsWhat skills and experience do you need for this job?
Journeyman’s Red Seal preferred, or equivalent1-3 years’ management experience in a high-volume food service and restaurant operationExperience in demonstration of pastiesExperience in menu writing, development and costingStrong background in high volume and productionAbility to manage in a diverse environment with focus on customer serviceExperienced and proficient in the latest sanitation and HACCP standardsAbility to control operating costs – labour and foodComputer literacy is essentialBeing an effective administrator through inventory programsHighly organized with the ability to create consistency without compromising creativityComfortable working on your feet for extended periods of timeAdhere to the Pursuit grooming policyStandard first-aid or higher is an assetWhat will your work environment be like?
